Fried Rice (double it…just trust me)
2 (4) cups cooked rice, cooled
1 (2) T olive oil
1/2 (1) cup chopped onion
1/4 (1/2) cup frozen veggies (peas and carrots traditionally, but we used mixed)
1 (2) egg
2 (4) T butter
2 (4) T soy sauce

Sauté onions and veggies in oil until softened/browning. Add salt and pepper to taste. Move veggies to side of pan. Add butter and scramble egg lightly.
Add rice and sauté for about 5 minutes. Add soy sauce and cook another minute. Serve hot with shrimp/ yum yum sauce.

Shrimp/Yum Yum Sauce (don’t double it…it makes a LOT!)
1 1/2 cups mayonnaise
1/3 cup water
1/2 t tomato paste
1T melted butter
1t garlic powder
1/2t paprika (plus more to taste)
Cayenne pepper (up to 1/4t to taste)
2t sugar

Whisk all together. Refrigerate 30 mins or so, to let flavors come together. Taste and adjust spices as needed.
